Quick and Easy Chicken Paella

 
 
So on Saturday night I tested out this recipie that I found on the Netmums website I adapted it a little bit and added a few extra bits and it turned out really yummy you can do the same and alter the amounts.
 
Ingredients (serves 2)
 
2 Chicken breasts
1 x 500g pack Basmati Rice
1 Chicken Stock cube
1/2 onion
1/2 Pepper
Cherry Tomotoes
Chopped Chilli
1tsp Garlic
1 tbsp cooking oil

Cook the chicken according to the pack instructions.
Heat 1tbsp cooking oil in a deep frying pan and soften the onion and peppers for 5 mins without browning. Add basmati rice and stir until coated by the oil, then add 1 litre of chicken stock, the cooked chopped chicken and cherry tomatoes. Add the garlic and chilli
Bring to the boil then gently simmer for 15-20 mins, stirring occasionally until the rice is tender and all the stock absorbed.
