Yummy Italian Chicken And Tomato Soup

As you all know I have recently started Slimming World and have been trying out lots of new recipes from their site. Recently I have been really in to cooking soups so when I spotted this recipe I thought it sounded lovely but I decided to adapt it a little bit.
If you are a follower of Slimming World on the Extra Easy plan this soup is totally FREE, you heard me right it's free so you could have as much of this as you want.


Ingredients 
1 onion chopped
2 carrots peeled and chopped
2 large skinless chicken breasts cut to strips
600g tin of chopped tomatoes
400ml chicken stock
Finely grated zest and juice of 1 lemon
Garlic, mixed herbs and chilli flakes to taste

So first things first you need to cook you chicken through if you are using a pan make sure you use fry light or else your soup wont be free and you will use up unnecessary syns. When the chicken is cooked through I then added the onions, carrots, garlic and chilli flakes. Fry for a couple of minutes.

Then I added the tomatoes, stock, mixed herbs and the zest and juice of the lemon and then bought that to the boil. Have a little taste and if like me you want a bit more of a spicy flavour just add more chilli flakes.

I thoroughly enjoyed this soup and will definitely be making this again. I hope you enjoy it too

Special K Chocolate Biscuits Moments*

Quite a while ago I was given the chance to review some new biscuits from Special K when they bought out their new Strawberry Biscuits moments and I loved them. So imagine my happiness when a box of their chocolate ones unexpectedly popped through my letter box.


These are so yummy perfect if you love your chocolate like I do and they are only 98 calories for 2 good size biscuits, definitely better than munching on about 5 normal biscuits. Plus you get the best of both worlds with this tasty snack you get your chocolate and biscuit fix without filling yourself with lots of calories which is good if like me your are trying to loose some weight.

What are you waiting for get yourself down the biscuit aisle of your local supermarket and grab yourself a box for just £1.99 and then once you are back home but the kettle on and enjoy an afternoon snack.

Weight Loss Diary #4

It's been quite a few days since I last did a weight loss update so I thought I had better update tonight. I had my first weigh in on Tuesday and I lost 4lb I am so pleased so put that with the 2lb the week before and thats 6lb already so I am doing well. I just can't wait until I start seeing a difference myself. It is making me even more determined to stick at it now and do really well, plus I would love to start getting stickers at the weigh ins hehe. If I can get 4lb again this week then that's my half a stone already.

I am also going to try and do a bit more exercise now the weather is getting a bit better we have been housebound the last week as I haven't been able to get out with the pram. So tomorrow I am going to do a bit of shopping as I need to buy some work clothes for when I go back. I also received some new exercise pants so I am going to be testing them out doing my exercise DVDs

Weight Loss Diary #3

So tonight I have finally decided to do it, I have joined Slimming world. I had been thinking about joining for a while and finally bit the bullet tonight. The group seems really nice and the lady who runs it was really nice it wasn't scary at all. It's really nice how everybody claps each other when you have lost weight, hopefully they will be clapping me next week. Plus for slimmer of the week they make a good bag up with lots of fruit and veg and you can win that, which is a really nice idea. Next week they have a couple talking who have lots over 11 stone between them! How fab is that.
Thomas come along too for a bit of moral support and all the ladies loved him, he was showing off crawling all over the place and when I called his name telling him to come back to me he just shot me a cheeky smile and crawled off! Little monkey.

I am just going to write a meal plan for this next week now and get a shopping list for Tesco so I can get some yummy food for this week. I'm surprised how much I am looking forward to it. I will definitely keep you updated. I thought I would have a treat before I start SW tomorrow and I had a Mc Donalds and it was the first bit of grease I have had it over a week and it was horrible I didn't even finish it so hopefully that memory will keep me going now.

In other news I have lost 2lb this last week just through using Skinny Sprinkles and watching what I eat woohoo I'm glad I am getting somewhere.

Weight Loss Diary #2

Since my last update I have had 2 pretty good days, all of my meals have been healthy and I haven't been snacking which I think is definitely because of Skinny Sprinkles My only problem is the calorie counting, It just isn't for me at all the fitness pal app is telling me I should be eating 1200 calories a day but that is so hard even when you are eating healthily.

I have also started a little weight loss chat group with some fellow bloggers who are wanting to loose weight but like me were looking for friends for some motivation. So far we are all doing really well I can't wait until we can share our successes with each other.

I think I have also made my mind up to try Slimming World. After speaking to so many other people who have done really well on it I think it could be the diet for me. As I said I'm not a points counter and this diet sounds like its pretty free. So hopefully I will be starting that in a couple of weeks I have been talking to David about it and he is happy for me to go for it. I was worried about the price but it will only work out to be about £20-25 a month and when you think about it you could spend more than that on take-aways a month (Not that I would even be having take aways as they are part of my spending ban)

Weight Loss Diary #1

As you all know I am trying to loose the rest of this pesky baby weight now, I am just sick of feeling horrible about myself, I don't feel comfortable in my clothes and I just don't like the way I am at the minute. So I think I have mentioned before I want to loose about 2st8 to be back down to my pre-pregnancy weight.
I don't want this to sound big headed or anything but I have never had to loose weight before so finding the motivation to do this is hard (and it doesn't help when you try to tempt me with KFC David!! ;) ) I just hope I can stick at it this time. I want people be like "Ohh have you lost weight Sarah" and tell me I am looking good. More importantly though I want to feel better about myself.

Today has been a good day I had a quick look at the Chantelle DVD but I think I need to keep building up on that, I did a bit today but I was out of puff so quick. The last time I did any real exercise was when David and I went to the gym and I can't even remember when the membership for that finished!

Food wise Breakfast was just a couple of Belvita biscuits as we didn't have anything proper in but I have bought some Sultana Bran now which I like. I went to Tesco and got some healthier foods. I am wanting to cut down on my bread so I have bought some pittas and tortilla wraps so I can have sandwiches with them as I find they don't leave me feeling as bloated. I also got some "good" snacks I got some Special K Cracker crisps and some of their Biscuit moments.

Before my dinner and tea I had the Skinny sprinkles with milk and I find they work better that way for me.

For dinner I made some Carrot and Coriander soup I was surprised how easy it was actually! All you need is

1 tsp vegetable oil
1 onion chopped
450g carrots sliced ( I guessed at the weight
1 Potato diced
1 tsp ground coriander
1.2lt vegetable stock (Forgot to get this so used chicken it tasted fine)
handful of fresh coriander chopped

First all you need to do it heat the oil in a pan and then add the onion as they are starting to soften add the carrot and potato and the ground coriander. After this add the stock to the pan and bring to boil. Then turn the heat down and allow to simmer for around 20minutes or until the carrots and potato has softened.

Then put it in a food processor with the fresh coriander and then whizz up until it is like a thick soup consistancy. I actually used Thomas's baby food blended but it worked perfectly.
The soup tasted lovely and with it being slightly thicker than normal soup I found it really filling I had it with 2 Ryebreads and you always need something to dip in soup. I also have 2 more batches for the Freezer to have on another day.





For tea we were meant to be having steak but it hadn't defrosted so we will be having that tomorrow. I ended up just having pasta with a bit of cheese which was actually nice just on its own, With a bit of lettuce, cucumber and peppers and then after I just had the last 2 Belvita biscuits in the pack and then a few of the cracker crisps and My fitness pal app says that I still have around 279 out of 1200 calories left.

It's still very early days but I can't wait until I see a change when I step on the scales.

An Introduction To Skinny Sprinkles*

Last night I stepped on the scales for the first time in over a month and I was pretty disgusted when the digits showed up on the screen. I seriously need to do something about it, you see I am one of those people who moan and complain about their weight yet still find it so hard to find the motivation to actually do anything about it even though I hate my body at the minute.

I think my main problem is being at home all day every day I am so close to food all the time and especially now there is still Christmas chocolates floating around. Whenever I get a bit bored I head to the cupboards. I really need David to either eat all the snacks or hide them somewhere!


In my quest to stop my terrible snacking habits I am going to be trialing Skinny Sprinkles over the next couple of weeks. Skinny Sprinkles is a weightloss drink for those of us who are snackers or who's portion sizes are too big.
There are a few clever ingredients that are in Skinny Sprinkles are Glucomannan which helps to make you feel full as it absorbs water so when it reaches your tummy it swells giving you the full feeling, it then turns in to a sort of gel solution. This is why when you are mixing the solution you need to drink it within 5 minutes.

The second ingredient is Inulin which helps prevent the sugar rush and also helps to reduce sugar cravings. Also as Inulin isn't absorbed you don't take in any extra calories. It also is a carbohydrate storage so it means it makes the energy you absorb from the carbs you eat last longer so that you feel more energised and it keeps hunger at bay for longer.

There is also a natural caffeine, Yes a natural caffeine! That comes from Guarana and Green tea so it will leave you feeling more alert and energises without the need of your usual morning coffee, which will also cut calories.

Skinny Sprinkles are not meant to be used as a meal replacement, you are suppose to drink them if you are feeling the need to snack or half hour before a meal so that you can try and cut your portion sizes down. For this reason I think I will get on well with them, I don't think I could hack diets like the Cambridge diet or other diets similar where you are using meal replacements, although how I am feeling at the moment I think I would give anything a go!

Yummy Mummy Training - Why I Want To Loose Weight.

For week 2 we have a post written by Zoe who blogs over at mymummysworld.blogspot.co.uk Here she tells us why she is wanting to loose weight and how she is going to do it.

Why I want to lose weight...



Some mothers, and non mothers will be able to agree with me that after birth it is difficult to loose the weight in which you gained during pregnancy. I understand it takes nine months for your body to gain all the extra pounds so you should allow a similar amount of time too loose the weight and for your body to recover. However, I struggled with my weight before getting pregnant with Jack; I was attending my local Weight Watchers and at first was loosing weight, then I started to gain weight and couldn't understand why. I understood that once a month I would be heavier due to retaining water, but it was getting a regular occurrence, then I found out I was pregnant. I decided at that point to give up on Weight Watchers to give my child a healthy start during my pregnancy. After Jack was born, again I struggled with my weight loss, but decided that eventually it would come off; I'd just been through birth and didn't need to worry myself straight away. When Jack was 4Months I joined Slimming World as my mum lost a lot of weight with these a few years back, and my dad was currently doing it and loosing lots of weight. However, yet again I struggled; my first week I lost an amazing 8lbs, but then was putting it all on again. What was I doing wrong? After continuing to gain weight, I let myself down and also gave up Slimming World. I had no motivation at this point as I was having a lot of family stress.
Jack is now coming up to 7months old; I am yet again going to try to loose weight thinking third time lucky. In order to achieve my weight loss I am going to follow tips I learnt within my weight loss classes, and include as much exercise as possible, which is difficult to fit in at present. However, I have Zumba for my Wii so will attempt that. I am also going to drink as much water as possible. I currently don't drink a lot during the day, maybe one or two glasses. I shall also be cooking meals with less fat and salt content to help the whole family. Including more vegetables on the plate, especially super vegetables. Finally eating more fruit throughout the day also.
I currently feel motivated to loose this weight; I want Jack to have a 'Yummy Mummy' and a healthy mum. I am also going on holiday next year so would love to feel confident in my outfits again.

Kellogs Special K Cracker Crisps–A Tasty Review


The people over at Special K are really outdoing themselves on the snack front. They have a new product out for all of you savoury snackers out there who love crisps but always feel guilty after (Yes I am talking about myself)
I adore crisps always have done and always will. I will put my hands up and admit that in the past I have been unable to stop at just one packet.
These yummy little cracker crisps are just 95 calories per 21 crisps! In your average packet of crisps you are looking at about 170ish calories so already these are the better option and the crackers are quite big so I don’t even think I would eat 21 in one sitting.

The crackers come in three wonderful flavours Sea salt and balsamic Vinegar, Sweet chilli and Sour cream and onion. All 3 are my favourite flavours so I was super dooper happy about this.
Now if you have tried other low calorie crisps in the past you might have thought they were pretty tasteless but believe me these are really tasty.

What’s better is that these are available in 2 ways a box as I was sent perfect for a night in when your putting your feet up in front on the tele when the baby is in bed, or you can buy them in individual bags perfect to keep in your handbag for when you are feeling a bit peckish. These will be retailing for 60p per individual bag which I think is great especially when some packets of crisps cost upwards of 70p I know which I will be reaching for in the future. Also there is the boxes which will be retailing for £1.99 for a 100g box which again is fab as you can sometimes pay around that price for a large pack of crisps.

Although I have been sent these for reviewing purposes all the opinions are my own.

Yummy Mummy - Wardrobe Update Oasis

Part of getting my body back and loosing weight after having Thomas is obviously my wardobe needs updating, Now I'm not going to be spending lots of money on new clothes just yet as hopefully they wont fit me in a couple of months (Here's hoping) But here are somethings I have got my eye on for when I have lost weight. I want to start wearing more dresses I love the look of pretty dresses with thick tights and either ballet pumps or ankle boots. So you don't need to wear jeans everyday to keep warm. There are some really lovely dresses on the Oasis website that have caught my eye. This is my favourite dress by far I love print dresses.

 
I love outfits that are vesitile for example theoutfit above would look great to wear during the day but if you loose the tights and add a pair of high heels it's great for a night out.

 
This outfit is great for a shopping trip with a nice comfy pair of flats. The great thing about black skinnies is they can be dressed up for a night out too. Just swap the flats for a pair of eye catching heels. I had to add the watch I love it I'm dying for a nice pretty gold watch.

Tales from the scales: How I lost my baby weight

Apparently, it takes nine months to put it on and nine months to lose it”.  This was the very first line of the blog I started in April 2012.  Whilst this is a nice way to boost the feelings of those women feeling overweight after having a baby who have not yet reached the post-birth nine-month cut off, I found myself three stone overweight ten months after our Lovely Little One (the LLO) was born.

 


The Cake Fork of Irony

The problem was primarily that I suffered with anxiety for a time after the LLO arrived and being ‘nice’ to myself involved a fair bit of eating, but was also due to the fact that being a mum in those early days was like some kind of compulsory cake fest.  Everywhere we went there was cake – mums and baby groups, friends’ houses, baby courses: cake, cake, cake.  Then, if there wasn’t any cake within the immediate vicinity of wherever I was, I would seek some out. 


 Ooh I really fancy a coffee.  Look at that cake ... far too good not to have with a cuppa!

 
It’s cold.  The LLO needs feeding.  Let’s go into that cafe.  I’ll have a cappuccino and a piece of THAT MASSIVE cake please.

 I was therefore, happily maintaining and adding to my baby weight.

Epiphany Day

I had a day where I felt particularly fat.  My maternity jeans were still on and I started to notice that my antenatal friends were looking thinner and were out of their maternity clothes.  I was unable to get my old belt to the first hole and my maternity jeans were still firmly on.  I then thought about returning to work in two months’ time - how was I ever going to fit into my work clothes?  It was either a whole new wardrobe, or get a bit thinner.

Now I am not a fan of diets but I also don’t have the inclination for a gym at the moment (an activity I also find extremely tedious).  We have an allotment that used to keep me fit, but it is impossible to get stuck into the potatoes when the LLO is crawling around the green house and clambering over the rabbit fencing.  What I needed was an eating plan that kept me full and didn’t deny me the things I like.  This is where Weightwatchers (WW) came in. 

 I had a voucher for a free introduction session (they always seem to be doing these so look out for one if you want to start going) and went along.  After the leader had explained how the diet works, I quickly realised that this is no fad diet but just healthy eating in a controlled way: the eating plan I was looking for.  The aim is to get your BMI to within the healthy range 20-25 and you have to stick to a points system which is just a way of making sure you are not overeating or eating the wrong things.  If you only eat cake and chocolate all day, which you can do if you like, you will be ravenous as all your points will have gone with no room for a substantial dinner, whereas if you choose your food wisely, you can feel full up all day long.  Which is just how I like to be.

 
The weight just came off

Five months in and I have lost two stone, 7.5 lbs.  I am only a few more pounds off my goal, and am already in the BMI 20-25 range.  Brilliant.

 What has struck me about this quest to shed the excess weight is how easy it has been; I really don't feel that I've had to work for it.  I have still had ice cream, fish and chips, chocolate and cake, but just in a measured (healthy) way.  My husband has lost two stone too, and he isn't even doing WW, just eating what I eat in the evenings.

 That’s all well and good, but how have you actually done it?

Everyone is obviously different, but there are four main ways I have found work for me:

  1. WW recipes: Some of the best ones we regularly cook are from the WW magazine.  These have made us enjoy evening meals and have added some welcome changes to our previous menu.
  2. WW chocolate bars: my mid morning snack is a cuppa and one of a range of bars they sell at the meetings.  My favourite ones are the dark chocolate toffee bars.  There are a whole range of other WW foods available through the meetings and in the shops, but I tend to buy the bars and cook everything else myself fresh.
  3. Staying to the meetings: these are good fun and I know that I am much more motivated if I stay, rather than just going along, getting weighed and then leaving – but everyone is different.  You don’t actually have to go to the meetings at all and can do it all online, but I prefer to be in a group. That way a day of face-stuffing is answerable to a person that will care.
  4. Understanding my eating habits: This is the most important part of this journey so much so, I am going to give it its own heading…

 Understanding my eating habits

Through the weekly WW sessions, there are lots of ideas to get you thinking about your lifestyle and how you eat.  Here’s what I have learnt:

 
After realising how I eat, I then was able to come up with ways to reduce my bad habits.  When hungry, I open the cupboard or the fridge and stare in, expecting something quick and gratifying to leap out at me.  This usually ended up being junk food.  So I bought my favourite fruits (blueberries, grapes, melon, mango, bananas, strawberries…) and loaded the fridge up.  I had so much fruit in there at one point, I was able to just open the door and grab handfuls of lovely fruits (not an arduous apple in sight).

 
How do I feel?

Honestly, great.  My confidence is back and my lovely husband did a double-take of me in a new outfit the other day that was perhaps the best compliment ever!  Essentially, I feel happy in my body again and I know that at this weight, I am healthier too and am less at risk of numerous scary-sounding illnesses.  Win win.

 
Skinny jeans..? You must be joking

Perhaps the best thing that happened to me on this weight-loss quest was purchasing my first pair of skinny jeans which involved a great deal of inaudible punching of the air and big facial expressions of YES YES YES!!! in the changing room whilst shaking my fists silently at the fool in the mirror. 

 

This was always something so far off the scale of anything foreseeable that I have spent the last few years stating this event would be an impossibility in my lifetime.  But since then, I have purchased another SMALLER pair of skinny jeans and feel great.

Special K Biscuit Moments Strawberry–A Tasty Review


Trying to loose weight and being a terrible snacker isn’t really going to work is it? When you know you can’t snack your brain thinks it’s funny to make you want snacks even more than normal. So when I was given the chance to review Special K’s Biscuit Moments I jumped at the chance.


Biscuit Moments are a lovely light biscuit with a strawberry centre  with a drizzle of vanilla to top it off. They are a bit of a mix between a biscuit and a breakfast bar so they do feel really light. Each pack contains 2 biscuits and at 98 calories per pack these are fab, when you think that 2 chocolate digestives can contain 168 calories I know which I would prefer just looking at the size of them I feel like they hit the spot more than just 2 normal biscuits.

Although I wont be dunkin’ these biscuits in my afternoon brew they do go really well with them. Just perfect for when I want to put my feet up with a cuppa when Thomas is having his afternoon nap without having to worry about the next time I step on a set of scales.
 
Biscuit Moments are available in two flavours Strawberry and Blueberry and they retail for around £1.99. If you are a serious snacker like me I would suggest trying these out to get your biscuit fix without the guilt afterwards.
